Buckwheat green yellow, gluten free

Green buckwheat is a species that is closely related to black buckwheat. The properties and uses of both are very similar. The botanical name of the plant commonly known as green buckwheat is Fagopyrum tataricum. This buckwheat provides much energy, is easy to digest and contains no gluten.

Unlike black buckwheat, green buckwheat is not hulled. The groats can be ground into a flour that is used very similarly to black buckwheat flour. The taste of green buckwheat is milder and less acrid than that of black buckwheat. Green buckwheat flour is used to make delicate tasting, golden pancakes – traditional old-fashioned buckwheat flapjacks. As well, green buckwheat kernels can be sprouted on soil and eaten as a delicious addition to salads or made into an energizing juice. Recipe

• Green buckwheat pancakes
1 cup green buckwheat flour
1 cup white flour
1teaspoon baking powder
cold water

Mix the dry ingredients together and add water until a thick batter is obtained. Allow to rest for 15 minutes and then add enough water to give the batter the consistency of thick cream. Oil a pan (for the first pancake only) and cook pancakes on both sides. Makes 12 pancakes.
