Garlic is an essential ingredient in fine cuisine everywhere. Its many properties are recognized in traditional medicine, and modern science also acknowledges its nutraceutic qualities. Scientific studies have demonstrated the effectiveness of garlic in preventing cancer and treating diabetes, hypertension and hypercholesterolemia. As part of a healthy diet, garlic can thus be considered an asset in counteracting a number of diseases related to lifestyle and aging. Garlic contains a substance called allicin, which has a potential for improving the immune system, as well as having antibacterial and fungicidal properties. However, allicin is fragile and tends to decompose in prepared garlic. It is therefore preferable to use fresh garlic or a product that is guaranteed to contain a certain quantity of allicin. To be effective, the daily dose of allicin consumed should equal at least 4000 µg, which represents about 4 grams of fresh garlic or a good tablespoon of chopped garlic.
